Summer Beer Pairing Dinner

Treat yourself to a truly elegant dining experience! Our Summer Beer Pairing Dinner menu is a feast of seasonal specialty dishes created just for this event. Hosted by our brewmaster, Roland Allen, the evening includes five courses, craft beer samples and a souvenir pint glass.


Appetizer – Coyote Spirit Amber Ale

Strawberry Rhubarb Gazpacho – A light refreshing strawberry rhubarb gazpacho, with heirloom tomatoes and zesty citrus, topped with olive oil and basil.

Salad – Feather Falls Thunder

Belgian Endive Salad – Endive topped with sweet cherries, watercress, smoked bleu cheese and pecans. Dressed with a Dijon vinaigrette and garnished with a sour cherry glaze.

1st Entrée – Golden Feather Extra Pale Ale

Smoked Beer Can Chicken – Chicken with mustard and blackened seasoning rub, smoked for 4 hours over beer-soaked oak atop a can of our craft beer. Served with roasted Brussels sprouts tossed in honey and balsamic vinaigrette reduction.

2nd Entrée – Jester Imperial Pilsner

Braised Wild Boar with Masa Dumplings – Wild boar shoulder braised in a tomato and chili sauce. Served with fried masa dumplings, poblanos, and nopales (cactus leaves), and topped with pickled red onions.

Dessert – Doppel Down Doppelbock

Molten Lava Cake – A chocolate cake filled with molten caramel sauce. Served with homemade black charcoal vanilla ice cream and a Hawaiian sea salt sugar wafer.
