Winter Beer Pairing Dinner

Treat yourself to a truly elegant dining experience! Our Winter Beer Pairing Dinner menu is a feast of seasonal specialty dishes created just for this event. Hosted by our brewmaster, Heath Barker, the evening includes five courses, craft beer samples and a souvenir pint glass.
Appetizer – Meat and Cheese Platter
Paired With Crouching Cougar Oak-Aged Barley Wine
A personal platter featuring soppressata Italian dry salami, dry-cured chorizo, Manchengo cheese, Humboldt Fog cheese, dried apricots, assorted olives, and sourdough bread.
Salad – Butternut Squash and Quinoa Salad
Paired with Wild Warrior American Pale Ale
Ginger-glazed butternut squash roasted with red and yellow peppers, tossed with citrus infused quinoa, then topped with goat cheese, blistered red grapes and fresh basil.
1st Entrée – Coffee-Rubbed Zabuton Steak
Paired with Barker’s Brown Ale
Zabuton is an exceptionally marbled steak that is cut from the upper portion on the chuck. Rubbed in dark roast coffee grounds, then braised in a red wine coffee reduction, and served over Smoked Gouda and Yukon Gold mashed potatoes.
2nd Entrée – Smoked Venison
Paired with Butte Strong Hazy Double IPA
A savory loin of venison smoked over hickory for up to 4 hours with a blackberry balsamic reduction, served with grilled garlic broccolini.
Dessert – Cranberry Bread Pudding
Paired with Seasons Cranberry Ale
A cranberry and citrus bread pudding made with Big Horn Valley Whole Wheat and McKenzie Farms Old Fashioned Buttermilk breads, finished with a blood orange whipped cream and garnished with chiffonade of mint.
