Winter Beer Pairing Dinner

Treat yourself to a truly elegant dining experience! Our Winter Beer Pairing Dinner menu is a feast of seasonal specialty dishes created just for this event. Hosted by our brewmaster, Roland Allen, the evening includes five courses, craft beer samples and a souvenir pint glass. Dinner music provided by Jonathan Arthur.
Appetizer – Paired with Coyote Spirit Amber Ale
Ceviché – Brazilian-style octopus with grilled fruits; Cuban-style shrimp with a spicy jalapeño kick; Costa-Rican style scallops tossed in club soda and fresh ginger.
Salad: – Paired with Dancing Trees Hefeweizen
Pomegranate, Mandarin and Endive Salad – Red and green Belgian endives, mandarin segments, candied pecans, and pomegranate arils, dressed with a pomegranate vinaigrette.
1st Entrée – Paired with Wild Warrior Pale Ale
Chicken Marengo with Wild Warrior Onion Soubise – A breast of chicken with julienne peppers and onion and a marinara sauce, baked golden brown inside puff pastry. Served with soubise sauce and sautéed green beans.
2nd Entrée – Paired with Bet on Black Dark Cascadian Ale
Barley-Brined Pork Belly – Pork belly brined with a combination of our dark roasted barleys, then smoked over a hickory wood fire and topped with a spicy bourbon sauce. Served with garlic rosemary croquets.
Dessert – Paired with Seasons Cranberry Ale
Cranberry Walnut Crumb Cake – A crumb cake with cranberries and toasted walnuts, topped with a cinnamon pecan whipped cream.
